It was one of those moments you can remember in detail years later. It was a sunny August afternoon in 2008. Michael and Jenny were discussing what kind of a life they wanted to build together. They were tired of long international work trips and hours spent in a lab.
They knew they wanted to spend their days working side by side and building something as a family. They wanted Michael to be able to utilize his PhD in physics and knack for innovation. Jenny wanted to finally work locally and develop a business that was a part of the community. And they knew they wanted to be a part of the movement back to creating things with intention and love and responsibility.
"A distillery. It's a distillery," Jenny said. And, once it was out there that was it.
Five years of penny pinching and business plan writing and (cough) distilling in their home and interning at distilleries and one awesome small business loan later, Griffo Distillery was born. Two more years of full time construction, recipe testing and brand development and they opened the doors to Griffo Distillery in April 2015.
